Pumpkin Spice Cake


My husband ran to the store for me this weekend, and informed me he has stocked me up on pumpkin! I think these were a hit! He is sure I will need to make more Pumpkin Spice Cakes. These individual cakes are a perfect size for serving during the holidays. 





This is an easy two ingredient dessert.  You can't go wrong with this dessert. All you need is spice cake mix, and can of pumpkin.  I found this recipe at the Pampered Chef website when I was looking for ideas how to use their brownie pan





Mix the two ingredients and pour into the brownie pan sprayed with cooking oil.



Place in 325-degree oven for 20-22 minutes. Wait 5 minutes, then transfer cakes to a cooling rack, and top with frosting or powdered sugar.




Pumpkin Spice Cake
PRINT RECIPE INGREDIENTS:
1 Spice Cake Mix
1 15 oz can of pumpkin

DIRECTIONS:
1. Mix Spice Cake Mix and pumpkin together.
2. Place in Pampered Chef Brownie Pan sprayed with cooking oil.
3. Bake 20-22 minutes in 325-degree oven.
4 Wait 5 minutes to remove cakes from pan and transfer to cooling rack.
5. Top with frosting or powdered sugar.

The weekend before Valentine's Day, Macie pulled out a farm magazine, and told me, "Papa wanted me to make this." She had it saved in her room, so she wouldn't forget. She had it hidden in her closet. Maybe because that was the easiest place to find it.  If you can imagine a pre-teen room, that is exactly what her's looks like.

She was in charge of this recipe, and I was excited to see her try a crock-pot recipe!



This was my chance to watch her find all the ingredients (I hoped we had all of the ingredients!) This is a simple recipe, so you will most likely have all ingredients.



This recipe was tucked inside  the February edition of The Progressive Farmer magazine.  Between features on irrigation and new generation farmers, is a recipe about sugar, and lava cake.  Recipe credit goes to Rachel Johnson, Stupid Good Food.




I am sure someone licked the spatula, who can resist!?


After a couple hours in the crock pot, it looked delicious! Very easy dessert recipe! She called papa to come down for dessert, she had a surprise for him! 


Crock Pot Lava Cake
PRINT RECIPE
1 20 ounce double chocolate brownie mix
1 large egg
⅓ c water
⅓ c canola oil
1 3.9 ounce box chocolate pudding mix
2 cups cold milk
Cooking spray
Cool Whip

  1. Prepare brownie mix, egg, water and oil in bowl until smooth.  
  2. Prepare pudding mix with milk in a bowl, whisk until smooth and thick, about 5 minutes.
  3. Spray crock pot with cooking spray, turn on low.
  4. Add brownie batter, use spatula to smooth out.
  5. Add pudding mix on top of brownie batter and swirl into brownie batter.
  6. Cook on low for 2 hours, or until edges are set.
  7. Serve with Cool Whip

Things are quiet around here.  Like the calm before the storm.  Spring.  Plant 2016

It's been fairy cool, and soil temperatures have remained pretty cool.  No one around here is in a big hurry to get in the fields.  


We celebrated Dave's "BIG 40th" a couple weeks ago.  I really thought I would have a big party for him. I did surprise him for his 30th, and our 10th anniversary. No party this year.  It was probably the best since he wasn't feeling the best.

His favorite cake is angel food. So while he's home with a sick kid, and not feeling the best himself, he made his own cake!

He told me I was in charge of the icing.  I knew he would want the homemade caramel icing.

You can't walk away from this project. It needs your attention.  We have featured this caramel icing recipe when we made Angel Food Cupcakes.

The end result is delicious and fabulous, and  you wonder why you don't make angel food cake every week!

Grandma Lois Caramel Frosting


Ingredients:
2 tsp.       Margarine (or butter)
2/3 cup    Brown Sugar
1/3 cup    Evaporated Milk
1-2 cups     Powdered Sugar


Directions:
Bring to a boil, constantly stirring. Remove pan from heat, and set aside.
Stir in 1 tsp vanilla.
Stir in enough powdered sugar to make spreadable. Immediately pour over cake.

Easy Cake-Mix Banana Bread


My daughter loves banana bread! The last batch of banana bread I made, I caught her sneaking bites of bread all day long! Boys came home from hunting and it was all gone!

She runs in the kitchen, grabs a bite, then jets back to the living room.

She has been working on her "sneaking & hiding" skills for quite some time. A few years ago, when she was a 2-year-old "little helper" when we picked strawberries every spring. I remember she loved to help out in kitchen then! I was busy making freezer jelly, but stepped out of the kitchen for a minute. When I came back,  I caught her picking strawberries off the trays, and transferring them to my pocket in my apron. I quietly left the room, and came back with the video camera. That one is in the vault!

This time I decided to make a different type of banana bread. Add some chocolate chips. It should be called the perfect banana bread. It's easy, too!



Easy Cake-Mix Banana Bread

1 box Betty Crocker™ yellow cake mix 
1/3  cup oil
3 eggs
1 1/2 cups mashed bananas (3 to 4 medium) 
 
2 cups milk chocolate chips 

Directions

  • Heat oven to 350°F. Generously spray 2 (8x4-inch) loaf pans with cooking spray; lightly flour pans.
  • Select your favorite banana bread recipe variation from those below.
  • In large bowl, beat all ingredients above plus ingredients from selected variation below until well mixed. Divide batter evenly between pans.
  • Bake 45 to 55 minutes or until toothpick inserted in center of loaves comes out clean and inside of cracks do not look wet. Cool 15 minutes in pans on cooling racks. Remove loaves from pans to cooling racks.
