Cheesy Ham Hasbrown Casserole


Cheesy Ham Hashbrown Casserole is a great combination of cheese, meat, and hashbrowns into a casserole everyone would love for a cookout, picnic or leftover ham!




This is another great recipe from my mom.  If I keep sharing all her recipes, everything will be named Nana's Soup, Nana's Cookies, Nana's Meatballs, etc.  She knows what works the best and said this is a great casserole to take to work for pitch-in lunches.




Cheesy Ham Hashbrown Casserole is an easy recipe to throw together.  Being a busy mom, I can appreciate recipes like this that have so much great flavor.  9x13 pans are great to have around, and it's lots of food.  Husband loves to take leftovers to work the next day.




Casseroles are very convenient and combine flavor and texture into a great meal. 
CHEESY HAM HASHBROWN CASSEROLE PRINT RECIPE
INGREDIENTS FOR CHEESY HAM HASHBROWN CASSEROLE 
10 ounces diced ham
30 oz bag hash browns
16 oz sour cream
2 cups shredded cheddar cheese
2 cans cream of potato
1 ½ cups Parmesan cheese
Salt and pepper


DIRECTIONS FOR CHEESY HAM HASHBROWN CASSEROLE Preheat oven to 375 degrees

1. Mix ham, hash browns, sour cream, shredded cheese, cream of potato, parmesan cheese and salt and pepper in a bowl.

2. Pour mixture into greased 9x13 pan.

3. Bake in oven 40-50 minutes.

4. Add more shredded cheese immediately.

TIPS FOR CHEESY HAM HASHBROWN CASSEROLE 
Ham options: Use leftover ham, cubed ham steaks or shredded ham
Add any shredded cheese of your choice

Pumpkin Slab Pie


Fall is here, and one of the most popular ingredients in many recipes is pumpkin! If you are a pumpkin fan, you will love Pumpkin Slab Pie.  Pumpkin pie in a pan, and feeds so many!




Every Thanksgiving meal we know someone will bring a pumpkin pie.  It's a tradition, and topped with whipped cream, is my favorite.



The first pumpkin pie was actually apples and spices cooked inside of a whole pumpkin! Think about that idea! Now, over 50 million pumpkin pies are baked every year.







Over 1.5 billion pounds of pumpkin are produced each year in the United State.  The top pumpkin-producing states are Illinois, Indiana, Ohio, Pennsylvania, and California. Not only are pumpkins great for fall decorations, but the real pumpkins are also healthy and rich in Vitamin A. Pumpkins are also a good source of fiber, and helps with digestion.  Eating pumpkin pie around the holidays is great to treat yourself to a delicious dessert. 




PUMPKIN SLAB PIE PRINT RECIPE
INGREDIENTS FOR PUMPKIN SLAB PIE
2 pie crust
2 cans pure pumpkin, 15 oz each
1 tsp fresh ginger
1 ¼ cup heavy cream
1 ¼ cup milk
4 eggs
1 cup brown sugar
½ cup white sugar
2 tsp pumpkin pie spice
1 tsp salt


DIRECTIONS FOR PUMPKIN SLAB PIE
1. Prepare 15 x 10 jelly pan and Preheat oven 400 degrees
2. Place 1 rectangle pie crust on a floured surface
3. Roll into 12x10 rectangle place over one edge of the pan, with 3 inch overhang, repeat with the other crust
4. Press seams together to seal
5. Trim dough around the pan, leave ½” overhang, and crimp the edges of the pie dough
6. Cover dough with large sheet of parchment paper and pie weights
7. Bake 14 minutes on 400 degrees
8. Remove paper and weights, Bake 8-10 minutes
9. In saucepan, cook pumpkin on high for 10 minutes, stirring often.  Remove from heat and let cool
10. In a bowl, whisk cream, milk, eggs, brown sugar, white sugar, pumpkin pie spice, and salt until smooth.
11. Add pumpkin mixture, whisk until smooth.
12. Pour mixture into the pre baked pie crust 
13. Bake 25-35 minutes
14. Cool and cut, serve with whipped cream.


TIPS FOR PUMPKIN SLAB PIE

Round pie crust works well too, just roll out to fit over edges of jelly pan.
Substitutes for Ginger: For 1 teaspoon fresh or ground ginger, substitute 1 teaspoon ground allspice, ground cinnamon, ground mace, or ground nutmeg.

Homemade Barbecue Meatballs

Homemade Barbecue Meatballs


These are the best Homemade Barbecue Meatballs, Ever! This homemade meatball recipe is so simple.  You will want to make this for your next get together with friends! They will love it, and this recipe makes plenty to share!




I love homemade meatballs.  My mom used to make this recipe all the time.  This is a special recipe out of our church cookbook, by Hazel Duzan.  




My boys were so impressed this was a homemade barbecue sauce.  One asked for seconds, and the other one gave me a thumbs up! 

Three pounds of hamburger sounds like a lot, but this makes a big batch!  I used a scoop to make my meatballs, but I still used my hand to form the meatballs, so they were firmer and cooked better.  








HOMEMADE BARBECUE MEATBALLS


INGREDIENTS FOR HOMEMADE BARBECUE MEATBALLS
3 lbs Ground Beef
1 cup milk
2 large eggs
1 tsp salt
1 tsp Worcestershire Sauce
2 cups Oatmeal
½ tsp Garlic Powder
1 T minced onion
1 tsp pepper
½ tsp chili powder


INGREDIENTS FOR HOMEMADE BARBECUE SAUCE
1 ½ c Brown Sugar
1 tsp Mustard
2 cups catsup
1 tsp Worcestershire Sauce
1 tsp Chili Powder
½ c Barbecue sauce


DIRECTIONS FOR HOMEMADE BARBECUE MEATBALLS
1. Mix all ingredients for the meatballs
2. Form into balls
3. Put into sprayed 9x13 pan
4. Cover with homemade sauce

5. Bake at 350 for 1 hour

Grilled Pork Chops


Summertime is the perfect time to use the grill. Grilled Pork Chops, seasoned just right, brings so much flavor to the meat. 





Creating perfect grill marks on meat on the grill is like a personal victory! One less dirty pan is another mom victory!




According to the National Pork Producers Council, the pork industry supports 550,000 jobs in the United States. These jobs range from pork producers and meat processors to transport and Main Street businesses.



Depending on how lean and thin your pork chops are, adjust the cooking time for each side.  Thinner pork chops do not require as much time as thicker chops or chops with the bone in.




If your kids love barbeque sauce like mine, you can add it at the end of the cooking time.  It adds another flavor to the pork chop, and I prefer it sometimes, too.  Instant Pot Macaroni and Cheese would be a great side for pork chops!

There are so many different ways to eat pork chops, another is Fried Pork Chops, another family favorite! 


GRILLED PORK CHOPS
PRINT RECIPE HERE
INGREDIENTS FOR GRILLED PORK CHOPS
¾ “ - 1” cut pork chops or loin
Salt and pepper for seasoning
Your favorite seasoning


INSTRUCTIONS FOR GRILLED PORK CHOPS

1. Preheat grill, make sure grates on the grill are clean
2. Prepare pork chops, and season to taste
3. Place pork chops on grill, and cook 8 to 10 minutes on each side. 
4. A meat thermometer inserted into the thickest part of a chop should read at least 145 degrees F

Dear Daughter, First Day of High School


Dear Daughter,
Here are somethings I want you to know before on your first day of High School.

You will have Homework

Homework comes first.  That was the rule for me when I was in High School.  Set the phone down, turn down the music and study.  Take good notes, and ask questions. 

Smile
 
On your way to class, Smile to other students.  Don't roll your eyes at this, you are making someone else's day.

Practice Hard

I have told you and your brothers this all the time. When you practice, play like you are trying out for the team.  Put all you have into your practices, and your hard work will pay off.  You don't just get a spot on the team, you earn it.

Your Friends Matter

You are so blessed to be surrounded by good friendships.  They are beautiful, smart and hardworking. If they have the same values as you do, I pray you will l lift each other up.  Include all, and trust a few.

Get Up!

Those friends who thought that were your friends? Sometimes they will push you down.   Get back up.  I'm sorry that this hurts, but I have been there.  You will get through this.

Everything you do is Public

I've always said, as soon as you do something, your dad and I will find out.  When we were in HS, we didn't have social media.  Everything you do is public.  Be mindful of what you post on Instagram, Snapchat, etc.

Trust God

I know you have a great love for God.  Before you were even old enough to realize the why you have pushed me to go to church on Sunday's I wanted to sleep in.  Trust God in the decisions you make. If you set your mind to it, you can do it.

Lean on Me

Lean on me, your dad, your grandparents.  Your support system will always be here for you.

I am looking forward to summer when during that time of the year, we enjoy many gardens finds.  Black raspberries are even a sweeter find, the bushes are found in the woods behind our house. We enjoy a delicious black raspberry pie.

Black Raspberries are great fresh or frozen.  We make pies, add to fruit desserts, and make jam. My grandmother loved to make black raspberry jam, I will have to share that recipe with you soon.

Black Raspberry bushes are beautiful to look at, but when you are really up close and personal, it is best to wear protective clothing.  I suggest long sleeve shirts and jeans and boots.  It may be warm when it's time to pick the berries, but these bushes have small thorns you need to protect yourself from.

This is a simple 2 crust pie recipe.  You can use your favorite pie recipe, or use the Pillsbury refrigerated pie crust.

In a bowl, combine 4-5 cups of berries, 2/3 cup of sugar, and 4 tablespoons of corn starch. Stir and combine.  Add to the bottom crust and spread out.

Add the top crust and make a design.  Cut slits in the top crust.

Add some sugar on top of the crust before putting in the oven.  It bakes into the crust and creates a delicious flavor.

 Place the pie in a 425 degree oven, and bake for 10 minutes, then lower heat to 350 degrees and bake for 30-40 minutes.

One of my favorite pie pans is this Anchor Hocking Glass Pie Plate. It is usually my go-to pie plate to use.  I love the little handles on the side.

BLACK RASPBERRY PIE

PRINT RECIPE
Ingredients

4-5  cups of raspberries
⅔ cup sugar
4 tablespoons corn starch
2 tablespoons sugar

Preparation

Preheat oven to 425 degrees.
Prepare an Anchor Hocking Glass Pie Plate and spray with vegetable oil.
Transfer dough to pie plate, trim even with the edge
Mix berries, sugar, and corn starch.
Add to the bottom crust and spread out.
Add top crust and cut slits.
Sprinkle sugar on the top crust.
 Place the pie in a 425 degree oven, and bake for 10 minutes, then lower heat to 350 degrees and bake for 30-40 minutes.

Tips

Watch the time of oven carefully, ovens vary.
You can try recipes with different berries.

Fried Pork Chops

Fried Pork Chops



Fried Pork Chops takes pork chops to another level.  The crispy breading adds more flavor and keeps the meat very tender.  I love this recipe, a family recipe I hope yours will enjoy, too.



Special meals can be remembered forever.  One special meal we have had for a family growing up is now one of my husband’s favorite meals.  He was first introduced to Fried Pork Chops after our daughter was born.  My mom spent some time with us at our house after Macie was born.  I was spoiled with laundry services and meals prepared.  Macie was born right before Christmas, so it definitely was a special time of the year. 
Macie is celebrating her 14th birthday this month. She has enjoyed showing pigs before she was old enough to join 4-H.  Each year she becomes more responsible in her swine project.  She is very interested in learning the feeding plans and monitors their health daily.  All three kids spend a lot of time in the barn and get to know their animals.



Mom made her fried pork chops and my husband was won over with this meal. 

FRIED PORK CHOPS

PRINT RECIPE

Ingredients for Fried Pork Chops

  • 6-8 Bone in Pork Chops
  • ½ cup of vegetable oil
  • 2 cups of all purpose flour
  • 1 tsp steak seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • Salt and Pepper to taste

How to make Fried Pork Chops

  1. In a large skillet, heat the cooking oil over medium heat.
  2. Rinse and pat pork chops with a paper towel.
  3. Add flour, steak seasoning, salt and pepper to a gallon size bag.  Seal and mix all ingredients.
  4. Check the skillet, make sure the oil is hot enough to cook pork chops.
  5. Add one pork chop at a time to the mixture and coat, set aside on a plate.
  6. Cook chops 3-4 minutes on each side, checking temperature, 160 degrees.
  7. Remove from skillet and place on a clean plate.

Notes on making Fried Pork Chops

  • Use an electric skillet if you have one on hand.

If you have an electric skillet, this is the best way to make the fried pork chops, it keeps the mess off the stove.  If you don’t have one, then use a deep pan on the stove. 



We normally make 6-8 fried pork chops, they also make great leftovers.  You can dip them in BBQ or ketchup, kids do request strange things!
