I can't believe school starts so soon! Our fair was just a week ago, and kids are loading up for the State Fair as we speak! 
August means, get ready, it's back to school time! Time to order school supplies, buy new book bags, and check the kids new class and sports schedules one more time!

Penne pasta is my husband's favorite type of pasta.  I always have to reserve a little pasta back for my youngest son.  The first serving is always noodles, no sauce.  Second serving he requests the sauce!

You can definitely make this on the stove top and be done, but I like to sometimes finish this out on the stove and make a casserole.

I love all kinds of cheese on my pasta dishes.  We mainly use cheddar and mozzarella. After combining the cooked pasta, and the meat sauce, I add to the 9x13 pan.  Then top with favorite shredded cheese.  Pasta seems to go a little further this way, and leftovers are a big deal in our house, too.


CHEESY PENNE PASTA BAKE
PRINT RECIPE

INGREDIENTS TO MAKE CHEESY PENNE PASTA BAKE
1 clove garlic
1/2 chopped onion
1 lb. Penne Pasta
2 lbs. Ground hamburger
1 - 24 oz jar Prego Traditional Italian Sauce
1- 24 oz can Hunt’s Traditional Spaghetti Sauce
Salt and Pepper to taste
2 cups shredded mozzarella cheese

HOW TO MAKE CHEESY PENNE PASTA BAKE

Add onion and garlic to skillet, and bake.
Add two pounds of hamburger to skillet and brown, drain grease.
Add both jars of Prego and Hunt's sauce to the skillet, and mix with the cooked penne pasta.
Spray 9x13 pan with cooking spray. Put the penne pasta into the pan, add salt and pepper.
Add 2 cups shredded mozzarella cheese on top.
Place in oven, preheated to 350 degrees, uncovered.
Bake for 20-30 minutes, until cheese is brown.

NOTES ON CHEESY PENNE PASTA BAKE

Can substitute for any type of pasta for this bake.
Use your favorite cheese, mozzarella or cheddar.

This easy, one pot Pepperoni Pizza Rigatoni made in the Instant Pot was a win for the family! Everything was made in one pot, and was great for easy cleanup!

Cabin fever, snow days, weekends, organizing the basement.  What to do when it's cold and snowy outside. 

But Mom, why are you putting pepperoni in the Instant Pot?
Mom, What are those big noodles?
Mom, Do I really have to fold the towels?
Mom, Do we have a two-hour delay tomorrow?

I love the brown feature on the Instant Pot!  I added 2 pounds of ground pork and one pound of ground beef, 2 cloves garlic chopped, and half onion chopped, and turned on the brown function.  This way, I am only using one pot for this entire meal! Drain meat, and return to pot.

I added 16 oz of uncooked rigatoni pasta on top of the meat mixture.  The rigatoni pasta was new for us, definitely stepping outside of our comfort zone to the husbands favorite, penne pasta.

It is important to make sure the pasta is covered with sauce and water completely.  Believe me, I have plenty of trail and errors with the Instant Pot.  That is why I encourage you to get the Christmas present out of the box, and give it a try! It's too easy! Some evenings you need a break from regular cooking! Add Spaghetti Sauce (or pizza sauce if you have on hand), tomato paste, sugar, spices, and water.

I put the pepperoni on top, because I wondering myself like the kids, why am I putting pepperoni in the Instant Pot? Will it be ok to cook that long ? YES. Could it be stacked above the meat? YES

Lock lid, make sure vent is closed. Set to Cook/Manual for 15 minutes.  Let it natural release for 10 minutes if preferred.  Or quick release.  I think I was just distracted!

Add your favorite shredded cheese on top, it doesn't take long for it to melt on the pasta.



INSTANT POT PEPPERONI PIZZA RIGATONI
PRINT RECIPE

Ingredients for Instant Pot Pepperoni Pizza Rigatoni
  • 2 pounds ground sausage
  • 1 pound ground beef
  • 2 cloves garlic chopped
  • 1/2 onion, chopped
  • salt and pepper to taste
  • 1 tsp oregano
  • 1 tsp onion powder
  • 4 oz tomato paste
  • 14 oz. Prego Traditional Sauce
  • 24 oz. Hunts Traditional Sauce
  • 16 oz Rigatoni
  • 1/2 cup sugar
  • 4 cups water
  • 2 cups shredded mozzarella cheese

How To Make Instant Pot Pepperoni Pizza Rigatoni

  1. Brown ground sausage and ground beef with onions and garlic. Drain.
  2. Add meat mixture back to Instant Pot, season.
  3. Add uncooked rigatoni.
  4. Add Prego sauce, Hunts sauce, tomato paste, sugar and water.
  5. Lock lid and close seal to vent.
  6. Set Manual/Cook 15 minutes.
  7. Slow release and open lid.
  8. Add favorite shredded cheese.

Instant Pot Goulash


Goulash is instant comfort food for me! I remember my mom making this. I wanted a quicker way to make it, so I made Instant Pot Goulash! Tastes just like I remember!

Harvest time is here, and farmers are getting busier in the fields. Goulash is a great meal to make, even if you get back in the house late. If you prefer spaghetti, try my Pressure Cooker Spaghetti recipe. 




When the corn plant starts dying off, it means the corn is getting ready to be harvested. If you look closer, you can see other changes. 




This ear of corn is completely filled out, and it is hanging down on the stalk, instead of standing up. That means is is very close to harvest, the silks are brown and the corn is starting to dent. The plant is no longer supplying the sugars to the corn, and the moisture is releasing out of the corn. The corn is still protected by the husks, which are starting to dry out. 




First step is to brown the meat.  You can brown the meat on the stove, but I used the brown function on the Instant Pot.  I added a chopped onion and a clove of garlic.  I used one ground pork and one ground beef.  Use seasonings of your choice. 



After the meat is brown, add one pound, or 16 ounces of uncooked pasta.  




We had an overabundance of tomatoes this year in our garden, so I am using our canned tomatoes.  One can of tomato juice and one can of stewed tomatoes.  Use spaghetti sauce of your choice.  Also, add one can of tomato paste and one cup of water. 




Set the Instant Pot to 15 minutes. When is is completed, carefully put a towel over the lid, and set the quick release.  Carefully remove lid, and add in cheese and serve the goulash. 

If you love pasta, you also need to try Pressure Cooker Spaghetti.




Instant Pot Goulash
PRINT RECIPE
Ingredients:
1 onion, chopped
1 clove garlic, minced
1 pound ground beef
1 pound ground pork
1 box elbow macaroni
1 jar tomato sauce*
1 jar stewed tomatoes*
1 can tomato paste
1 cup water
Salt and pepper to taste
Directions:
1. Chop onion and mince garlic.
2. Brown beef and hamburger on stove top, or use brown function on Instant Pot.
3. Add salt and pepper to taste.
4. Layer beef/pork mixture on the bottom, add dry elbow macaroni, and then add water, tomato sauce, stewed tomatoes and paste.
5. Follow directions for your Instant Pot and set for 15 minutes.
6. Open valve for quick release.
6. Immediately stir goulash and serve with parmesan or shredded cheese

* You can substitute the jar of tomato sauce and stewed tomatoes for 2 jars of spaghetti sauce.
