Edith's Breakfast Casserole


I love an easy breakfast idea that comes together quickly!  Edith's Breakfast Casserole is simple, and with a few ingredients, you will have breakfast prepared for the next morning.  






Edith's Breakfast Casserole is a family recipe passed on a few generations.  Edith is my Grandmother Patty's sister in law.  My mom said they use to go to Edith's house for Thanksgiving when they were growing up.


It is nice to have family recipes. First of all, I love to see how they cooked for their families.  It is very similar to what we do.  Second, I love keeping things in the family and sharing it with my kids. 






Everything is prepared the night before and sets up nicely in the refrigerator.  You should have all ingredients on hand, this is a very easy recipe.  I always make sure I have eggs on hand.  It only takes one time of running out of eggs, and you don't want that to happen again.



I was curious when I saw the recipe requested dry mustard.  Dry mustard brings more flavor to the recipe.  Dry mustard is also great in soups and sauces.  I encourage you to try it!






EDITH’S BREAKFAST CASSEROLE

INGREDIENTS FOR BREAKFAST CASSEROLE
1 pound ground pork sausage, cooked
6 eggs
2 cups milk
4 oz sliced mushrooms
6 pieces of sliced bread, torn in pieces
1 tsp dry mustard
1 ½ c shredded cheese
1 tsp salt


DIRECTIONS FOR BREAKFAST CASSEROLE
1. Brown pork sausage and drain, and let cool

2. Beat eggs and milk together

3. Add salt and dry mustard and beat again

4. Add torn bread pieces and stir until softened.

5. Stir in cheese, mushrooms and sausage. 

6. Pour into 9x13 greased baking dish.

7. Refrigerate overnight

8. Next day, bake at 350 for 40-45 minutes

TIPS FOR BREAKFAST CASSEROLE

Add shredded cheese on top of the casserole at the end of the cooking time
Let stand for a few minutes before cutting

Instant Pot Sous Vide Bacon Egg Bites is taking all great ingredients and creating a beautiful breakfast.  This is a popular breakfast, but we are making it more convenient in the Instant Pot for breakfast for the week!

These egg bites are very popular, served by Starbucks. The nearest Starbucks is over 30 miles, so I can't swing by on my way to work.  I have tried a few things when we travel, and ate a Blueberry in an airport in Texas.  One time I sent my husband to the lobby in Indy to get me a Black Tea from Starbucks.  I think he came back with something else from a different vendor.

It was amazing how the steam option made these egg bites so fluffy and they do raise in the mason jars so don't fill them all the way full.

The definition of Souse Vide is Sous-vide (/sˈvd/; French for "under vacuum")[1] is a method of cooking in which food is vacuum-sealed in a plastic pouch or a glass jar and then placed in a water bath or steam environment for longer than normal cooking times.  The great thing about Instant Pot is it is taking this way of cooking, and speeding up the process.  

This was the first time I used the "steam" option, and was very cautious about using it to make these eggs.  The eggs were so light, and fluffy.  I loved the taste.  I felt like I was eating a high-end breakfast.  So I broke out my grandmother's china dishes to enjoy this breakfast!

It doesn't get any prettier than this.  


INSTANT POT SOUS VIDE BACON EGG BITES

INGREDIENTS FOR INSTANT POT SOUS VIDE BACON EGG BITES:    
6 strips bacon
4 eggs
½ cup cheddar shredded cheese
¼ cup milk
½ cup cottage cheese
½ tsp salt
½ tsp pepper
Salsa, green onions, hot sauce
1 cup water


6 - 4oz mason jars


HOW TO MAKE INSTANT POT SOUS VIDE BACON EGG BITES:
1. Brown 6 strips of bacon, and set aside.
2. Add 1 cup water in the bottom of the Instant Pot.
3. Use the trivet for the mason jars.
4. In a blender combine the eggs, cheese, milk, cottage cheese, salt and pepper.
5. Spray mason jars with cooking oil.  
6. Fill mason jars with mixture, ½ to ¾ full.
7. Place aluminum foil over jars loosely.
8. Select Steam for 8 minutes
9. Natural Pressure Release for 10 minutes, then quick release.

Breakfast Burritos

Breakfast Burritos


Our mornings during the week are hectic, and kids need something to grab and go on their way to the bus.  I catch myself sometimes grabbing something in the drive-thru on the way to work.  Preparing these breakfast burritos for the week ahead gives me a peace of mind the kids have something to eat before their big day at school.



Everything can be prepared in one skillet, but I ran two skillets because I had help.  Kids were excited about helping, because they love to scramble eggs. 




Scramble 8 eggs with a little bit of water, or milk.


Brown one pound of pork sausage with 1/2 onion.


Peel, cut and chop 3-4 medium potatoes.  


Add 8 strips of crumbled bacon.


 Mix all cooked ingredients together, and add salt and pepper to taste. 


Assemble burritos and add shredded cheese on top.  Wrap them carefully. This recipe made 16 burritos.


After wrapping burritos, I wrapped them in saran wrap.  Kids can take one from the refrigerator, and warm it up in the microwave.  If you are preparing them for the freezer, wrap them in saran wrap, then aluminum foil.  


BREAKFAST BURRITOS
PRINT RECIPE
INGREDIENTS:

8 eggs
3-4 medium potatoes
1 pound pork sausage
½ chopped onion
bacon
Shredded cheese
8” tortillas


DIRECTIONS:
  1. Scramble eggs with ¼ cup milk.
  2. Peel, chop and boil 3-4 potatoes
  3. Brown 1 pound pork sausage with ½ chopped onion.
  4. Cook bacon and crumble.
  5. Assemble burritos with a tortilla, add eggs, potatoes, sausage, bacon, top with shredded cheese of choice.
  6. Wrap up burrito
  7. Wrap in saran wrap and store in refrigerator
  8. FREEZER OPTION - Wrap in saran wrap, then aluminum foil, and put in freezer.
