Goulash

Goulash


Every family has their list of simple hamburger meals. I’m sharing one with you that is so simple, and you only need a few ingredients.   Goulash. I hoped I spelled it right! 



Sometimes Goulash is our go-to when we realize we are out of spaghetti noodles!! Always keep macaroni noodles around for emergencies! If we aren't making Goulash, we are making Instant Pot Macaroni and Cheese.



We love using our own stewed tomatoes for this recipe. If you do not have stewed tomatoes, use your favorite tomato sauce, or stewed tomatoes from the store.







Now that my kids are getting bigger, and busy with sports.  It takes a lot of food to feed them. We always prepare meals with two pounds of beef.  If we are lucky, we have leftovers. Sometimes. 



GOULASH
PRINT RECIPE HERE
INGREDIENTS FOR GOULASH
2 pounds hamburger
1 tsp salt & pepper
1 small onion diced
1 box elbow macaroni
2 jars of your favorite sauce, we use stewed tomatoes


HOW TO MAKE GOULASH

  1. Boil water in a large pot with a lid.
  2. Brown Hamburger, diced onion, salt and pepper in a large skillet with a lid
  3. Drain grease from hamburger if needed and return to skillet.
  4. Cook pasta, drain and rinse.
  5. Add stewed tomatoes to the cooked ground beef, and stir in cooked pasta.  


TIPS FOR GOULASH


  • I only use half of the box of macaroni. I cook the entire box and store the cooked macaroni in the refrigerator for another meal.  

Serve with Parmesan Cheese or shredded cheese.

Instant Pot Chugwater Chili


Chili is a favorite of ours in the winter time.  It is a great comforting food that is best when cooked all day, and even better on the next day.  I knew the Instant Pot could help us get all the flavors combined in a shorter amount of time. 


A great thing about chili is it doesn't take many ingredients to make this hearty soup.  We used local beef and stewed tomatoes from our garden.

I browned two pounds of hamburger in the Instant Pot with one chopped onion.  I used the Brown button to brown the meat in the Instant Pot.  This option makes clean up even easier! 



I used 2 quarts of our stewed tomatoes we canned this summer. Two quarts of stewed tomatoes equals 8 cups.  Use tomato juice if you prefer.  We like thick chili. 







INSTANT POT CHUGWATER CHILI
PRINT RECIPE
INGREDIENTS:


2 pounds ground hamburger
1 chopped onion
2 cans chili beans
2 cans stewed tomatoes (I used 2 quarts of stewed tomatoes)
3 tablespoons Chugwater Chili Seasoning
Salt & Pepper to taste


DIRECTIONS:
1. Brown 2 pounds of hamburger and chopped onion in Instant Pot on Brown setting
2. Add chili beans, stewed tomatoes and Chugwater Chili Seasoning.
3. Lock lid, set manual 15 minutes.
4. Quick release soup when finished.

Instant Pot Beef Vegetable Stew




Ever have that one meal you crave? It's comfort food at its finest, especially when cooler weather is here to stay.   I challenged my husband one evening I could make Beef Vegetable Stew in the Instant Pot.  He didn't say much, just raised an eyebrow.  I took that as a challenge.  Beef Vegetable Stew is best when cooked all day. Right? During harvest, I don't have all day to cook.  I was going to put the Instant Pot to the test.



What is the difference between soup and stew?  Stew is heartier, thicker.  Soup has more liquid.  Add more juice to this recipe if needed, I was using a 6-qt Instant Pot. The pot was full with all ingredients mixed in.  It took awhile to set up the pressure, but the Stew/Soup option worked great on the Instant Pot



We are fortunate to use the tomato juice and stewed tomatoes from our garden.  The corn, peas and potatoes are from our garden as well.  The beef we purchased is from a local farmer, and one of my grain customers.  Using food we have grown in the garden, and supporting other local farmers is something we can show our kids how it's possible to grow healthy food for their family one day. 


I was very pleased how this turned out. The cook time was faster with the Instant Pot, and the flavors were still there.  I can't wait to try more soups and stews.  Enjoy!


INSTANT POT BEEF VEGETABLE STEW
PRINT RECIPE
Ingredients:
2 pounds sirloin steak, or stew meat
1 onion diced
2 cloves garlic minced
6 oz can tomato paste
16 oz tomato juice
16 oz stewed tomatoes
2 tbsp worchershire sauce
3 cups of red potatoes, cube
½ pound mini carrots
16 oz green beans
4-5 stalks celery
1 tsp oregano
1 tbsp dried parsley
1 bag frozen peas
3 cups frozen sweet corn
¼ cup flour
¼ cup water
Salt & Pepper to season


Instructions:

  1. Place the stew meat in the bottom of the Instant Pot, add all ingredients besides frozen pea, corn, and flour/water mixture.  Stir.
  2. Lock lid and set seal to close.
  3. Select the Stew/Soup option.
  4. After cooking, quick release the pressure, open valve, and be careful with steam.
  5. Stir in frozen corn, peas, and water/flour mixture. Stir until stew thickens and corn/peas are warmed.

Goulash is instant comfort food for me! I remember my mom making this. I wanted a quicker way to make it, so I made Instant Pot Goulash! Tastes just like I remember!

Harvest time is here, and farmers are getting busier in the fields. Goulash is a great meal to make, even if you get back in the house late. If you prefer spaghetti, try my Pressure Cooker Spaghetti recipe. 




When the corn plant starts dying off, it means the corn is getting ready to be harvested. If you look closer, you can see other changes. 




This ear of corn is completely filled out, and it is hanging down on the stalk, instead of standing up. That means is is very close to harvest, the silks are brown and the corn is starting to dent. The plant is no longer supplying the sugars to the corn, and the moisture is releasing out of the corn. The corn is still protected by the husks, which are starting to dry out. 




First step is to brown the meat.  You can brown the meat on the stove, but I used the brown function on the Instant Pot.  I added a chopped onion and a clove of garlic.  I used one ground pork and one ground beef.  Use seasonings of your choice. 



After the meat is brown, add one pound, or 16 ounces of uncooked pasta.  




We had an overabundance of tomatoes this year in our garden, so I am using our canned tomatoes.  One can of tomato juice and one can of stewed tomatoes.  Use spaghetti sauce of your choice.  Also, add one can of tomato paste and one cup of water. 




Set the Instant Pot to 15 minutes. When is is completed, carefully put a towel over the lid, and set the quick release.  Carefully remove lid, and add in cheese and serve the goulash. 

If you love pasta, you also need to try Pressure Cooker Spaghetti.




Instant Pot Goulash
PRINT RECIPE
Ingredients:
1 onion, chopped
1 clove garlic, minced
1 pound ground beef
1 pound ground pork
1 box elbow macaroni
1 jar tomato sauce*
1 jar stewed tomatoes*
1 can tomato paste
1 cup water
Salt and pepper to taste
Directions:
1. Chop onion and mince garlic.
2. Brown beef and hamburger on stove top, or use brown function on Instant Pot.
3. Add salt and pepper to taste.
4. Layer beef/pork mixture on the bottom, add dry elbow macaroni, and then add water, tomato sauce, stewed tomatoes and paste.
5. Follow directions for your Instant Pot and set for 15 minutes.
6. Open valve for quick release.
6. Immediately stir goulash and serve with parmesan or shredded cheese

* You can substitute the jar of tomato sauce and stewed tomatoes for 2 jars of spaghetti sauce.
