I was really exited to try potatoes in the Instant Pot! I wonder why I haven't tried this sooner, but like most of my other friends, there is some hesitations when using the Instant Pot.  I have found that if you just try it, it works out! I love all the flavors that come with this Instant Pot Bacon Ranch Potatoes Recipe.

We really took on a big project this summer. Because of the wet spring, planting the garden was later than normal We also planted more produce than the previous years.  These pictures were taken in June.  We had a problem with potato bugs this year.  Usually after the potato plants die, the bugs disappear.  They have stayed in the garden, and are now on the tomato plants. 




If you could see the garden right now, the potato plants are not as green.  Most of the plants have died off, and we are able to enjoy the potatoes. We have an overabundance of potatoes, red and white potatoes to enjoy! Making them in the Instant Pot was faster.



My family loves to eat potatoes, so I made a big batch of Bacon Ranch Potatoes.  I cut up 3 pounds of red potatoes and put in the Instant Pot.  I cut up 7 slices of bacon and added to the potatoes. Moisture is important when cooking in the Instant Pot, add 3 tablespoons of water. Add parsley, garlic powder and salt and pepper.

Set the Instant Pot to 10 minutes.   When it is done, set quick release.  I put a kitchen towel over the valve when I set the quick release.  Stay away from the steam.

I mixed in a packet of Hidden Valley Ranch Seasoning Mix, you can add what you want for taste. Mix in shredded cheddar cheese, and serve.

Instant Pot Bacon Ranch Potatoes

PRINT RECIPE


Ingredients:

  • 3 pounds red potatoes
  • 7 strips bacon
  • 2 teaspoons dried parsley
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 4 oz shredded cheddar cheese
  • 1 Packet Hidden Valley Ranch Dressing Mix

Directions:

  1. Wash and cut the potatoes into 1 inch pieces.
  2. Cut the bacon into small pieces.
  3. Add potatoes, bacon and 4 tablespoons of water into the Instant Pot.
  4. Stir in dried parsley, garlic powder, salt and pepper.
  5. Set the instant pot to manual and set the time for 10 minutes.
  6. Release the pressure and carefully open the lid. This recipe was made with 6Qt Instant Pot.
  7. Add ranch dressing and cheese and stir to combine. Serve immediately. You can serve out of Instant Pot Bowl.

We spent the last weekend before kids were back in school in Michigan.  Weather was beautiful, and it was nice to sit back and relax.  Before we left Michigan, we stopped at a farmers market to pick up a basket of peaches.  Fresh Glazed Peach Pie is refreshing and delicious.

This is an easy, six-ingredient pie.  The peach glaze keeps the peach slices fresh!

If you have a favorite pie crust recipe, send it my way! I would love to try it! We were busy canning green beans and salsa, so we went the easy route, and used the Pillsbury Pie Dough. Simple, and it tastes great!

FRESH GLAZED PEACH PIE
PRINT RECIPE

8-10 fresh peaches, peeled and thinly sliced
1 pie crust, prepared
2 small boxes (3 oz) Peach Jello
1 cup water
1 cup sugar
2 heaping tablespoons corn starch

Prepare pie crust. Place peach slices in the pie until full. Set aside.


Add 1 cup water, 1 cup sugar, and 2 tablespoons of cornstarch in a small sauce pan over medium heat.  Whisk until thick and dissolved.

Remove from heat and add 2 small boxes of Peach Jello
. Pour over peaches.  Chill 2 hours until set.

This week, we are resting from a busy week at the fair.  I am back to work this week, and it has forced me to open up my planner, and notice that August isn't too far away.  August means the beginning of school, football games, and tailgating.  Crock Pot BBQ Wings immediately came to mind when I was thinking of something I knew the kids would love for dinner.  This is also an easy recipe to make when you are going to a potluck or tailgating.

July will be a month to remember.  Besides vacation and fair, we had a lot of rain.  We have received a lot of rain since spring planing season, but we have almost received 15 inches of rain just in the month of August! The corn and bean crops have been stressed over and over again.  Saturated soils and some ponding can lead to variable yields this coming harvest.  

Fall Sports will begin soon, and it is the best time to get the Colts Crock Pot out and start cooking some easy meals. Crock Pot BBQ only takes two main ingredients.  Chicken Wings and Weber Sweet & Thick Honey BBQ Sauce.  Add some seasonings to the chicken before you start cooking it in the crock pot as well.

Chicken Wings were on sale at our local grocery store for $2.69.   It was fresh, not frozen.  I cooked it as soon as I got home.  You can store in refrigerator for a couple days, or cook right away.

I purchased 4 pounds of chicken wings, and lined the chicken wings in the bottom of the Crock Pot, covered with Weber Sweet & Thick Honey BBQ Sauce, added the rest of the chicken and Weber Sweet & Thick Honey BBQ Sauce.  Season with salt and pepper to taste.

Cook on high heat for 2.5 - 3 hours.  Keep an eye out towards the end and see if you prefer to add more BBQ Sauce.


Crock Pot BBQ Wings
PRINT RECIPE
4 pounds Chicken Wings
Salt & Pepper to taste


Spray the bottom of a Crock Pot.  Add half the chicken wings, and half of the BBQ Sauce.  Add remaining chicken and top with BBQ Sauce and season with salt and pepper.


Cook on High 2.5 - 3 hours

Add more BBQ Sauce if desired.

There is always a cookbook I grab when I am needing a home cooked meal that reminds me of home.  I have made the potato soup enough times to memorize the recipe, but I like having the cookbook with me.  




Potato Soup, Easy Soup Recipe


There are plenty of times when I want to make this soup, and I realize I am out of sour cream.  I try to keep sour cream on hand, all the time just in case of a craving for potato soup.  



Peel and chop potatoes, carrots, dice celery and onions and add to boiling water. 


Cook all vegetables until tender.  Add one cup of milk, and heat. Use a separate bowl to blend sour cream and chives with 1 teaspoon of flour, add one cup of milk. Add to the soup and cook until thick.  We also love to add grated cheese and Velveeta to the soup! Delicious! 



Nana’s Potato Soup
PRINT RECIPE
5 c diced potatoes
1 diced onion
2 c water
2 c milk
2 cubes chicken bouillon
1 tsp. Flour
½ c diced celery
3 carrots chopped
½ tsp salt
8 oz sour cream w chives


1. Combine potatoes, celery, onion, carrots, water, cubes, and salt.
2. Cover and cook until vegetables are tender.
3. Add 1 cup milk, and heat.
4. Blend sour cream and chives with flour in separate bowl, gradually stir in 1 cup milk.
5. Stir into potato mixture and cook until thick

OPTIONAL: Add favorite cheese to soup!

Weekends seem to fly by, always. I can't get enough hours in the day, and I am definitely not spending enough time in the kitchen. Crock Pot Hamburger Soup is very easy meal to prepare during the busy week.

Weather was perfect this weekend. We planted potatoes in the garden. Over 150 starters in the ground.  The potatoes are planted about 2" in the ground.  Potatoes grow well in well-drained soils. We have sandy loam soil in Jasper County.  




We also have beautiful sunsets as well. Some would consider this a fly-over state





Crock Pot Cheeseburger Soup is a easy recipe and you will have enough for left overs.  It has all the ingredients for a hearty meal.

CROCK POT HAMBURGER SOUP


PRINT RECIPE
2 lbs hamburger
1 diced onion
2 minced garlic 
1 large can tomato juice
8 oz water
2 14 oz can of beef broth
2 cups corn canned or frozen
3 cups uncooked pasta


  1. Brown 2 pounds of hamburger with 1 diced onion and 2 minced garlic.  
  2. Add to crock pot. Season with salt and pepper.
  3. Stir in tomato juice, water and beef broth.
  4. Cook in crock pot 2-3 hours.
  5. Add the corn and stir and cook for another 10 minutes
  6. Stir in cooked pasta and serve.
