Instant Pot Pepperoni Pizza Rigatoni


This easy, one pot Pepperoni Pizza Rigatoni made in the Instant Pot was a win for the family! Everything was made in one pot, and was great for easy cleanup!

Cabin fever, snow days, weekends, organizing the basement.  What to do when it's cold and snowy outside. 

But Mom, why are you putting pepperoni in the Instant Pot?
Mom, What are those big noodles?
Mom, Do I really have to fold the towels?
Mom, Do we have a two-hour delay tomorrow?

I love the brown feature on the Instant Pot!  I added 2 pounds of ground pork and one pound of ground beef, 2 cloves garlic chopped, and half onion chopped, and turned on the brown function.  This way, I am only using one pot for this entire meal! Drain meat, and return to pot.

I added 16 oz of uncooked rigatoni pasta on top of the meat mixture.  The rigatoni pasta was new for us, definitely stepping outside of our comfort zone to the husbands favorite, penne pasta.

It is important to make sure the pasta is covered with sauce and water completely.  Believe me, I have plenty of trail and errors with the Instant Pot.  That is why I encourage you to get the Christmas present out of the box, and give it a try! It's too easy! Some evenings you need a break from regular cooking! Add Spaghetti Sauce (or pizza sauce if you have on hand), tomato paste, sugar, spices, and water.

I put the pepperoni on top, because I wondering myself like the kids, why am I putting pepperoni in the Instant Pot? Will it be ok to cook that long ? YES. Could it be stacked above the meat? YES

Lock lid, make sure vent is closed. Set to Cook/Manual for 15 minutes.  Let it natural release for 10 minutes if preferred.  Or quick release.  I think I was just distracted!

Add your favorite shredded cheese on top, it doesn't take long for it to melt on the pasta.



INSTANT POT PEPPERONI PIZZA RIGATONI
PRINT RECIPE

Ingredients for Instant Pot Pepperoni Pizza Rigatoni
  • 2 pounds ground sausage
  • 1 pound ground beef
  • 2 cloves garlic chopped
  • 1/2 onion, chopped
  • salt and pepper to taste
  • 1 tsp oregano
  • 1 tsp onion powder
  • 4 oz tomato paste
  • 14 oz. Prego Traditional Sauce
  • 24 oz. Hunts Traditional Sauce
  • 16 oz Rigatoni
  • 1/2 cup sugar
  • 4 cups water
  • 2 cups shredded mozzarella cheese

How To Make Instant Pot Pepperoni Pizza Rigatoni

  1. Brown ground sausage and ground beef with onions and garlic. Drain.
  2. Add meat mixture back to Instant Pot, season.
  3. Add uncooked rigatoni.
  4. Add Prego sauce, Hunts sauce, tomato paste, sugar and water.
  5. Lock lid and close seal to vent.
  6. Set Manual/Cook 15 minutes.
  7. Slow release and open lid.
  8. Add favorite shredded cheese.

Breakfast Burritos

Breakfast Burritos


Our mornings during the week are hectic, and kids need something to grab and go on their way to the bus.  I catch myself sometimes grabbing something in the drive-thru on the way to work.  Preparing these breakfast burritos for the week ahead gives me a peace of mind the kids have something to eat before their big day at school.



Everything can be prepared in one skillet, but I ran two skillets because I had help.  Kids were excited about helping, because they love to scramble eggs. 




Scramble 8 eggs with a little bit of water, or milk.


Brown one pound of pork sausage with 1/2 onion.


Peel, cut and chop 3-4 medium potatoes.  


Add 8 strips of crumbled bacon.


 Mix all cooked ingredients together, and add salt and pepper to taste. 


Assemble burritos and add shredded cheese on top.  Wrap them carefully. This recipe made 16 burritos.


After wrapping burritos, I wrapped them in saran wrap.  Kids can take one from the refrigerator, and warm it up in the microwave.  If you are preparing them for the freezer, wrap them in saran wrap, then aluminum foil.  


BREAKFAST BURRITOS
PRINT RECIPE
INGREDIENTS:

8 eggs
3-4 medium potatoes
1 pound pork sausage
½ chopped onion
bacon
Shredded cheese
8” tortillas


DIRECTIONS:
  1. Scramble eggs with ¼ cup milk.
  2. Peel, chop and boil 3-4 potatoes
  3. Brown 1 pound pork sausage with ½ chopped onion.
  4. Cook bacon and crumble.
  5. Assemble burritos with a tortilla, add eggs, potatoes, sausage, bacon, top with shredded cheese of choice.
  6. Wrap up burrito
  7. Wrap in saran wrap and store in refrigerator
  8. FREEZER OPTION - Wrap in saran wrap, then aluminum foil, and put in freezer.

Last Day as a Cavalier

Last Day as a Cavalier


This day is hard.  Writing this post is hard.  

We are not moving. Ever.  Again. 

Today is the last day kids are a Cavalier and last day at Tri-County schools.  

We didn't move across the country like some friends I know who are making that move soon.  We have always lived in Jasper County and in the Rensselaer school district, but it was convenient to take the kids to Tri-County because that was the same town I work in. If the school needed a volunteer, I was there. If someone was sick, I was there less than five minutes.  It worked.

First Day of School 2015

Macie starts middle school next year, this is a big move and decided it was time. Ryan will be in 4th grade, and Mason will be in Pre-K.

Great friends were made about eight years in preschool at Tri-County, and we continued to stay at Tri-County schools.  It was a great decision.  The teachers are amazing, the families are awesome. The school was a great atmosphere for the kids.

Tri-County Schools has always put on an amazing Christmas Program.  Such a blessing.  You can't help but get goose bumps every time the 5th graders sing Silent Night.

DARE Essay Winners. I left a leadership meeting early to rush to the school to see the 5th grade DARE Graduation. I am so glad I did because Macie was the DARE Essay Winner from her class.  All the winners read their essays at the graduation.

The kids won a lunch with the Principal during the TC PTO Spring Carnival.  She took the kids out separately and she wrote to me, "Enjoyed having lunch with this fine man. You have polite, considerate children who are a joy to be with!"

Last Day of School 2016

The bittersweet day.  I didn't think we would make the switch to Rensselaer this soon, but I knew the day would come.  

It's amazing to think about all the friends and family who have helped with carpooling to and from preschool, games, events, feeding them snacks and subway, buying them Gatorade because mom won't, watching them while Dave and I work long harvest hours, making sure they did their homework.

I hope they are strong when they leave school today, hug their teachers and friends, and walk out proud.  We are so proud of them.  They both received student of the month awards, Honor Roll, perfect attendance, Cavalier Character award, and Student Council.  They make us so excited about what lies ahead for them!

It definitely takes a village to raise my monkeys, oh, I mean children.  

Our village is growing and expanding. We will meet new friends and family. Great opportunities are coming!  Rensselaer is dear to Dave because that is where he went to school, and he's excited about his kids becoming a BOMBER!

SNOW DAY, FUN DAY

SNOW DAY, FUN DAY




How did you spend your snow day? 





We made cupcakes, and they didn't last long!


The boys played outside while helping dad make chocolate ice cream!


The blizzard really happened.  We had 12" of snow. Snow day ended up being a nice day, and we were able to take the kids sledding behind the house.  They enjoyed it!
When they came inside they were treated to popcorn and  hot chocolate!  

{Kids ended up with a 5 day weekend because of the snow!}
