Homemade Barbecue Meatballs

Homemade Barbecue Meatballs

These are the best Homemade Barbecue Meatballs, Ever! This homemade meatball recipe is so simple.  You will want to make this for your next get together with friends! They will love it, and this recipe makes plenty to share!

I love homemade meatballs.  My mom used to make this recipe all the time.  This is a special recipe out of our church cookbook, by Hazel Duzan.

My boys were so impressed this was a homemade barbecue sauce.  One asked for seconds, and the other one gave me a thumbs up!

Three pounds of hamburger sounds like a lot, but this makes a big batch!  I used a scoop to make my meatballs, but I still used my hand to form the meatballs, so they were firmer and cooked better.

Pork shoulder is a great cut of pork for pulled pork. Using the crock pot is a great way to cook the pork at a lower temperature for a longer amount of time, and allows the meat to become tender enough to pull it apart for BBQ.

We attended the Indiana State Fair last weekend.  We watched our friends kids show pigs, ate lots of fair food, ate at the pork tent.  My daughter had a delicious baked potato with pork, cheese, sour cream and jalapenos on top, called loaded Potatchoes.  We drank lots of iced tea (it was a hot day) and of course, we had beignets for breakfast as soon as we got there!

6 Fun Facts about Indiana Pork

  1. There are more than 3,000 pork farmers in Indiana. The industry employs more than 13,000 people in the state.
  2. Ninety-four percent of Indiana’s pork farms are family-owned and operated.
  3. The Indiana pork industry contributes more than $3 billion annual to the state’s economy.
  4. Pork is the No. 1 consumer of soybean meal in Indiana, consumer 500,000 tons in 2011.
  5. Compared with 50 years ago, farmers are using 41 percent less water and 78 percent less land to produce pork.
  6. Pork is Indiana’s third top commodity, and the state is the fifth-largest producer of pork in the United States

The Skyride was installed in 2017. There is a line to ride it all day long! We still haven't been on it, but I need to do that next year. I would love to see that view of the fairgrounds, it's 35 feet high!

Use a 7-10 pound pork shoulder, place in crock pot and add chicken broth. Cover and cook on high for 4-5 hours, or on low for 6-8 hours.  Remove from crock pot, and use 2 forks and shred the pork.   Remove the fat, if needed. Remove all the juices from the crock pot and save.

Return shredded pork back to the crock pot, or you can freeze the shredded pork until you are ready to use it!  Add your favorite BBQ Sauce, and adding slaw gives it a crunch that I absolutely love!

Instant Pot Chicken Legs

Instant Pot Chicken Legs

Have you ever came home from shopping and didn't know what you were going to cook the family for supper? The struggle is real.  I spent $$$ on groceries, buying food for New Year's and had nothing in mind for a meal.  I am glad I picked up chicken legs. They are a great budget meal, at $1.20 per pound!  My kids love them, and Instant Pot Chicken Legs would be ready in a few minutes!

Chasing Saturday's, Instant Pot Chicken Legs

I grabbed the big family package, and I seasoned and put all the chicken legs in the Instant Pot.  I added our favorite BBQ sauce and a cup of water

After adding BBQ and water, lock the lid make sure the vent is closed.  Set timer to manual/pressure cook for 20 minutes.  When it is done cooking, quick release.  Place chicken legs on a cookie sheet lined with aluminum foil.

I brushed on more BBQ and put under the broiler for another five minutes.  Don't walk away from the broiler, turn the sheet if needed, and keep an eye on out on the chicken.

Crock Pot BBQ Chicken Wings

Crock Pot BBQ Chicken Wings

This week, we are resting from a busy week at the fair.  I am back to work this week, and it has forced me to open up my planner, and notice that August isn't too far away.  August means the beginning of school, football games, and tailgating.  Crock Pot BBQ Wings immediately came to mind when I was thinking of something I knew the kids would love for dinner.  This is also an easy recipe to make when you are going to a potluck or tailgating.

July will be a month to remember.  Besides vacation and fair, we had a lot of rain.  We have received a lot of rain since spring planing season, but we have almost received 15 inches of rain just in the month of August! The corn and bean crops have been stressed over and over again.  Saturated soils and some ponding can lead to variable yields this coming harvest.

Fall Sports will begin soon, and it is the best time to get the Colts Crock Pot out and start cooking some easy meals. Crock Pot BBQ only takes two main ingredients.  Chicken Wings and Weber Sweet & Thick Honey BBQ Sauce.  Add some seasonings to the chicken before you start cooking it in the crock pot as well.

Chicken Wings were on sale at our local grocery store for $2.69.   It was fresh, not frozen.  I cooked it as soon as I got home.  You can store in refrigerator for a couple days, or cook right away.

I purchased 4 pounds of chicken wings, and lined the chicken wings in the bottom of the Crock Pot, covered with Weber Sweet & Thick Honey BBQ Sauce, added the rest of the chicken and Weber Sweet & Thick Honey BBQ Sauce.  Season with salt and pepper to taste.

Cook on high heat for 2.5 - 3 hours.  Keep an eye out towards the end and see if you prefer to add more BBQ Sauce.
