MOM’S MUSHROOM MEATBALL CASSEROLE


Mom's mushroom meatball casserole was an instant hit! This recipe reminded me of my mom, and how she would make cream of mushroom meatballs in her electric skillet.  This was an easy week-night casserole that had plenty of leftovers for my husband's and son's lunch the next day. 



Have you ever picked up the phone to call/text your mom about a recipe? You remember her making something, but you can't remember all the steps? I had one of those moments this week.  It was a quick text to mom, and making sure I was doing it right.  I wanted to make her meatballs into a casserole and make sure I was correct on all the ingredients.  




Prepare noodles and meatballs and assemble in a 9x13 pan. I didn't use all the noodles in the bag, but I made sure to have extra plain noodles for the third kid who always wants  his first serving with plain noodles. 


Pour the cream of mushroom soup on top of the noodles and meatballs.  Cover the casserole with mozzarella cheese. 


Cover with aluminium foil, and bake the casserole in the oven for 45 minutes.  Or the same time it took me to take my daughter to town and and get  back home! Whatever works when you have a busy schedule, but I was able to prepare this casserole after work, and get it in the oven. 




MOM’S MUSHROOM MEATBALL CASSEROLE
PRINT RECIPE

INGREDIENTS FOR MOM’S MUSHROOM MEATBALL CASSEROLE

2 lbs hamburger
½ onion chopped
¾ cup bread crumbs
1 egg
½ tsp salt
½ tsp pepper
1 tsp garlic salt
12 oz bag egg noodles
1 large can cream of mushroom
2 cups water

2 cups shredded mozzarella cheese

HOW TO MAKE MOM’S MUSHROOM MEATBALL CASSEROLE


  1. Preheat oven 425 degrees.
  2. In a bowl, combine hamburger, chopped onion, bread crumbs, egg, salt, pepper, and garlic salt.  Create small meatballs and place in a pan and prepare on stovetop.
  3. While meatballs are cooking, heat water in large pot to a boil, and cook the egg noodles al dente.
  4. Mix the large can cream of mushroom and 2 cups of water in a microwave safe bowl, and place in microwave for 5-7 minutes.  
  5. Spray a 9x13 pan with cooking spray and add the egg noodles.  
  6. Add cooked meatballs.
  7. Cover noodles and meatballs with cream of mushroom soup.
  8. Top with mozzarella cheese. Cover casserole pan with aluminum foil.
  9. Bake in oven for 45 minutes at 425 degrees.

NOTES ON MOM’S MUSHROOM MEATBALL CASSEROLE - I prepared the meatballs comparable to the size of a golf ball. - I did not use all of the noddles in the package, keep in mind what you need to use per pan size. - You can use beef and pork mixture. - I placed the casserole under the broiler to brown the cheese for 5-7 minutes.

My favorite crock pot is the casserole crock pot.  It's blue and it is perfect for converting  your favorite casserole meals to crock pot meals! The Crock Pot Taco Rice Casserole was perfect match for the Casserole Crock Pot.

I like to make things simple when it comes to crock pot cooking! I prepared the hamburger in the Pampered Chef Micro Cooker in the microwave. You can cook the hamburger on the stove top, but it only took 5 minutes in the microwave.  Drain the fat, and add the rest of the onions, drained black beans, corn, the can of diced tomatoes with green chiles and 1/4 cup of Old El Paso Taco Seasoning Mix. I like to use Old El Paso Seasonings if you don't make your own taco seasoning.

Spray the crock pot with Pam Cooking Spray. Place the cooked rice in the crock pot, sprinkle garlic salt over the rice. Spread the mixture over the rice.

Spread Kraft Mexican Taco Shredded Cheese on top.  Cook on high for 2-3 hours.  Add more cheese if you want, so you might want to buy 2 bags!  This was delicious, and I know my son will love to eat this in a tortilla.  Add more cheese, onions, tomatoes, avocado, lettuce to your liking!

CROCK POT TACO RICE CASSEROLE PRINT RECIPE
INGREDIENTS
1 pound hamburger
1 onion, chopped
2 cups cooked rice
2 cups frozen sweet corn (or use canned corn)
1 can black beans, drained
1 can diced tomatoes with green chiles
½ tsp garlic salt
16 oz of  Kraft Mexican Taco Shredded Cheese
Salt and pepper to taste


DIRECTIONS
  1. Brown hamburger in Pampered Chef Mico Cooker with half chopped onion, and salt and pepper.
  2. Prepare 2 cups cooked rice.
  3. Mix hamburger, chopped onion, corn, diced tomatoes, black beans, Old El Paso Taco Seasoning Mix
  4. Spray Casserole Crock Pot with cooking spray.
  5. Spread rice in bottom of crock pot.
  6. Sprinkle garlic salt over the rice.
  7. Add the hamburger over the mixture.
  8. Add 8 ounces of Kraft Mexican Taco Shredded Cheese
  9. Cook on high 2-3 hours.
  10. Add more toppings if desired. Lettuce, tomatoes, onions, avacado, cheese, hot sauce, lettuce.

Crock Pot Cowboy Chili is for the hard working cowboys who work up an appetite for a hearty meal! 




My youngest kid loves to dress up as a cowboy.  This weekend when I was making the Crock Pot Cowboy Chili, he was wearing his black cowboy hat, boots, plaid shirt, jeans, and a rope tied to the side of his jeans.  He definitely channels his inner cowboy at all times.  




I have pictures and many memories of all the kids in cowboy hats and boots.  My kids have always loved to wear boots since they were little. They wear them farming, in the barn, or just playing. My daughter grew up in love with a pair of pink boots, it was a challenge to always find the next size for her! 

So this Cowboy Chili is for the kids.



Just like any chili recipe, you have your favorite ingredients, and the kids have theirs.  The daughter still picks out the beans, but she really doesn't know what she is missing.  So take the recipe and amp it up any way you like, make it hot, or use your favorite meat.



I used one pound of ground hamburger and one pound of ground pork.  Both come from our local meat locker, they are delicious.


I added one small chopped onion, celery, dark chili beans, red beans, kidney beans, and white beans.  I also use my own canned stewed tomatoes for the juice. You can also use canned tomatoes.  I also added a chopped jalapeno. Add 2 if you want! 



This is my favorite chili seasoning, I received this last year from a friend, Chugwater chili seasoning. You can find it online here. This is where you control your heat of the the chili.  I also added a tsp of regular chili seasoning as well.




Mix everything in a 6 qt Cook and Carry Crock Pot and set on low for 6 hours, or high 3-4 hours.

Add your favorite topping, cheese, onions, corn chips, sour cream, or corn bread.

INGREDIENTS PRINT RECIPE
1 pound hamburger
1 pound ground pork
1 large onion, chopped
2 cloves garlic
1 tbsp chili seasoning
2 tbsp Chug Water Chili seasoning
2 (15-ounce) cans red chili beans
2 (15-ounce) cans dark red chili beans, undrained
1 can white chili beans
1 can red kidney beans
2 (14.5-ounce) cans stewed tomatoes
4 stalks of celery, chopped
1 jalapeno, chopped
1 cup water
Shredded Cheddar cheese, optional
Sour cream, optional
Corn chips, optional
Saltine Crackers, optional
Sliced green onions, optional

DIRECTIONS
Brown one pound of hamburger and one pound of ground pork with a chopped onion and chopped garlic.

When meat is browned, transfer to 6 qt Cook and Carry Crock Pot.

Add all cans of beans (chili and kidney), stewed tomatoes, celery, jalapeno, and more water if needed.  

Set crock pot on low for 6 hours, or on high 3-4.  

Serve with your favorite toppings: Saltine crackers, sour cream, shredded cheese, corn chips, green  onions and corn bread.

Pressure Cooker Spaghetti



I keep mentioning that harvest is close to being over. Well, I think we are finally done!



 One meal that is easy to make in the Pressure Cooker, or  Instant Pot, is Spaghetti.  I felt like I was really going out of my comfort zone, but this is so much more convenient. 






















This picture was taken on one of the last evenings I worked late at the elevator.  Beautiful colors in the sky, and it was transferred right over to the camera. 

We are still looking for simple dinners. Sports is keeping us busy in the evenings. I don't know if I want to admit it, or I am proud to admit it, but we love spaghetti.  We can eat spaghetti once a week! It's a simple dinner to throw together.  There are so many options with the different types of pasta available, but the angel hair pasta is our favorite.




Brown one pound of hamburger and one pound of ground pork with a chopped onion  You can do two pounds of hamburger if you want to. There is a brown option on the pressure cooker, but I did this step on the stove. Add one box of angel hair pasta over the hamburger. 


Add jar of spaghetti sauce, one can of traditional spaghetti sauce, one small can of tomato paste, and one cup of water.  Lock on the lid, set pressure cooker for 15 minutes. 



When 15 minute timer is up, push on valve and release. Watch for steam.  Remove lid, and this is what it looks like. 



Immediately stir spaghetti and serve! 



Pressure Cooker Spaghetti

Ingredients:
1 onion, chopped
1 clove garlic, minced
1 pound ground beef
1 pound ground pork
1 box angel hair pasta
1 jar prego
1 can traditional spaghetti sauce
1 small can of tomato paste
1 cup water
Salt and pepper to taste
Directions:

1. Chop onion and mince garlic.
2. Brown beef and hamburger on stove top, or use brown function on pressure cooker
3. Add salt and pepper to taste.
4. Layer beef/pork mixture on the bottom, add dry spaghetti, and then add water, spaghetti sauce and paste
5. Set pressure cooker for 15 minutes.
6. Open valve for quick release.
6. Immediately stir spaghetti and serve with parmesan or shredded cheese



We could easily have this once a week, and leftovers are delicious!
