Pumpkin Slab Pie

Pumpkin Slab Pie

Fall is here, and one of the most popular ingredients in many recipes is pumpkin! If you are a pumpkin fan, you will love Pumpkin Slab Pie.  Pumpkin pie in a pan, and feeds so many!

Every Thanksgiving meal we know someone will bring a pumpkin pie.  It's a tradition, and topped with whipped cream, is my favorite.

The first pumpkin pie was actually apples and spices cooked inside of a whole pumpkin! Think about that idea! Now, over 50 million pumpkin pies are baked every year.

Over 1.5 billion pounds of pumpkin are produced each year in the United State.  The top pumpkin-producing states are Illinois, Indiana, Ohio, Pennsylvania, and California. Morton, IL declare their city, The Pumpkin Capital of the World.   If fall festivals are your thing, check out the 20 Best Fall Harvest Festivals and Events Across America.

Not only are pumpkins great for fall decorations, but the real pumpkins are also healthy and rich in Vitamin A. Pumpkins are also a good source of fiber, and helps with digestion.  Eating pumpkin pie around the holidays is great to treat yourself to a delicious dessert.

Pumpkin Spice Cake

Pumpkin Spice Cake

My husband ran to the store for me this weekend, and informed me he has stocked me up on pumpkin! I think these were a hit! He is sure I will need to make more Pumpkin Spice Cakes. These individual cakes are a perfect size for serving during the holidays.

This is an easy two ingredient dessert.  You can't go wrong with this dessert. All you need is spice cake mix, and can of pumpkin.  I found this recipe at the Pampered Chef website when I was looking for ideas how to use their brownie pan.

Mix the two ingredients and pour into the brownie pan sprayed with cooking oil.

Place in 325-degree oven for 20-22 minutes. Wait 5 minutes, then transfer cakes to a cooling rack, and top with frosting or powdered sugar.

Pumpkin Spice Pull Apart Bread

Pumpkin Spice Pull Apart Bread

Do you think September went by fast?  October is going to go by even faster. It's pumpkin time.  And while I do not have any pumpkins at my house because we are waiting for work to be done on our front porch, and the front sidewalk poured.  The kids can enjoy pumpkins at the grandparents house for now!

It was time to get a pumpkin inspired recipe done this weekend.  I have been craving pumpkin, and knew with the weekend off because of the  wet fields, I better get my baking done!

Get a can of grands biscuits, cut them in half and lay them out.

On each biscuit, layer pumpkin, butter, and sugar/spice mixture.

It almost looks like mini pumpkin pies here!

Love all the butter!  You know its going to be good!

Stack them up to get ready to place in the pan.

It's easier to tilt the pan when you stack all the biscuits in the pan, it will fill up the pan.

If you have any leftover butter, or sugar mix, add it here.

Bake for 40-50 minutes.

Mix powdered sugar, milk and vanilla to the consistency you would like for the icing. Use the remaining icing when you are serving.

Pumpkin Spice Pull Apart Bread

Ingredients:
1 can grands biscuits
1 can pumpkin
1 ½ teaspoon pumpkin spice
¾ c sugar
4 tablespoons butter, melted
2 cups powdered sugar
¼ cup milk
1 tsp vanilla

Directions:
Preheat oven 350 degrees.

Cut up grand biscuits in half and lay out. Use pumpkin filling and spread 1 tsp on each biscuit, then put melted butter, followed with the sugar/pumpkin spice mixtures.

Stack the biscuits, then place in a loaf pan.  Hold the pan at an angle until all biscuits are in the pan.  Top with any remaining butter or sugar/pumpkin spice mixture.

Cook in 350 degree oven 40-50 + minutes, depending on the pan.

Remove from oven.  Mix powdered sugar and milk and vanilla with a whisk.  Spoon over bread, and use remaining icing when serving.
