Crock Pot Cowboy Hamburger Soup

Crock Pot Cowboy Hamburger Soup

Crock Pot Cowboy Hamburger Soup is a hearty dish.  There will be plenty of leftovers for your family.  I love that the ingredients in this soup came from our garden and the beef came from a local farmer.

We planted a big garden this spring.  We have spent a lot of weekends canning green beans, tomato juice, stewed tomatoes, sweet corn. It was a lot of work, but worth it in the end.  We have a lot of canned goods to enjoy this winter.  I love adding tomato juice and stewed tomatoes.

Elevator Memories

Elevator Memories

Sharing some of my favorite pictures and memories from my job at Co-Alliance in Remington, Indiana.  The company decided to close this facility on Friday, August 31, 2018.  So much history and memories were made here each fall.  Grain was first delivered by small grain trucks and tractors and wagons, until now, where the lot is easily filled with semis.  I worked at this location for 16 years as a Grain Originator.  My first job when I moved to Indiana.  There might have been an occasion where I brought my kids to work on a Saturday or Sunday during harvest, but I had the best co-workers and customers around!  I personally and professionally grew in this position.  As I begin my new job, I still will strive for customer satisfaction.

Crock Pot Taco Rice Casserole

Crock Pot Taco Rice Casserole

My favorite crock pot is the casserole crock pot.  It's blue and it is perfect for converting  your favorite casserole meals to crock pot meals! The Crock Pot Taco Rice Casserole was perfect match for the Casserole Crock Pot.

Crock Pot Taco Rice Casserole

I like to make things simple when it comes to crock pot cooking! I prepared the hamburger in the Pampered Chef Micro Cooker in the microwave. You can cook the hamburger on the stove top, but it only took 5 minutes in the microwave.  Drain the fat, and add the rest of the onions, drained black beans, corn, the can of diced tomatoes with green chiles and 1/4 cup of Old El Paso Taco Seasoning Mix. I like to use Old El Paso Seasonings if you don't make your own taco seasoning.

Crock Pot Taco Rice Casserole

Spray the crock pot with Pam Cooking Spray. Place the cooked rice in the crock pot, sprinkle garlic salt over the rice. Spread the mixture over the rice.

Crock Pot Taco Rice Casserole

Spread Kraft Mexican Taco Shredded Cheese on top.  Cook on high for 2-3 hours.  Add more cheese if you want, so you might want to buy 2 bags!  This was delicious, and I know my son will love to eat this in a tortilla.  Add more cheese, onions, tomatoes, avocado, lettuce to your liking!

Instant Pot Beef Vegetable Stew

Instant Pot Beef Vegetable Stew

Ever have that one meal you crave? It's comfort food at its finest, especially when cooler weather is here to stay.   I challenged my husband one evening I could make Beef Vegetable Stew in the Instant Pot.  He didn't say much, just raised an eyebrow.  I took that as a challenge.  Beef Vegetable Stew is best when cooked all day. Right? During harvest, I don't have all day to cook.  I was going to put the Instant Pot to the test.

What is the difference between soup and stew?  Stew is heartier, thicker.  Soup has more liquid.  Add more juice to this recipe if needed, I was using a 6-qt Instant Pot. The pot was full with all ingredients mixed in.  It took awhile to set up the pressure, but the Stew/Soup option worked great on the Instant Pot

We are fortunate to use the tomato juice and stewed tomatoes from our garden.  The corn, peas and potatoes are from our garden as well.  The beef we purchased is from a local farmer, and one of my grain customers.  Using food we have grown in the garden, and supporting other local farmers is something we can show our kids how it's possible to grow healthy food for their family one day.

I was very pleased how this turned out. The cook time was faster with the Instant Pot, and the flavors were still there.  I can't wait to try more soups and stews.  Enjoy!

INSTANT POT BEEF VEGETABLE STEW
PRINT RECIPE
Ingredients:
2 pounds sirloin steak, or stew meat
1 onion diced
2 cloves garlic minced
6 oz can tomato paste
16 oz tomato juice
16 oz stewed tomatoes
2 tbsp worchershire sauce
3 cups of red potatoes, cube
½ pound mini carrots
16 oz green beans
4-5 stalks celery
1 tsp oregano
1 tbsp dried parsley
1 bag frozen peas
3 cups frozen sweet corn
¼ cup flour
¼ cup water
Salt & Pepper to season

Instructions:

  1. Place the stew meat in the bottom of the Instant Pot, add all ingredients besides frozen pea, corn, and flour/water mixture.  Stir.
  2. Lock lid and set seal to close.
  3. Select the Stew/Soup option.
  4. After cooking, quick release the pressure, open valve, and be careful with steam.
  5. Stir in frozen corn, peas, and water/flour mixture. Stir until stew thickens and corn/peas are warmed.

Crock Pot Hamburger Soup

Weekends seem to fly by, always. I can't get enough hours in the day, and I am definitely not spending enough time in the kitchen. Crock Pot Hamburger Soup is very easy meal to prepare during the busy week.

Weather was perfect this weekend. We planted potatoes in the garden. Over 150 starters in the ground.  The potatoes are planted about 2" in the ground.  Potatoes grow well in well-drained soils. We have sandy loam soil in Jasper County.

We also have beautiful sunsets as well. Some would consider this a fly-over state

Crock Pot Cheeseburger Soup is a easy recipe and you will have enough for left overs.  It has all the ingredients for a hearty meal.

Pressure Cooker BBQ Pork Ribs

Pressure Cooker BBQ Pork Ribs

Harvest is just about over.  It has been a beautiful fall.  I woke up Sunday and the trees in the woods are turning beautiful colors.  I wish I took the time to go out and take some pictures. I definitely need to do that soon.

Overall, crops looked really good this fall.  Yields were great, farmers seemed very pleased with them.  Yields is what the farmer gauges on the overall progress of their farm.  More yield equals more bushels, and in turns means more crop to sell.  Bins on the farm are full, and the run over bushels are brought to the elevator.  Ground piles at the elevator are full and tarped in this area.  Now farmers will wait for higher prices to sell their grain.

I would like to thank my husband for this recipe.  He was home earlier one evening before me and he had this dinner ready in 1 hour.  He is a big fan of the pressure cooker.

Since my husband started this dinner, I only have pictures of the final product. It was delicious and so easy.  He cut the pork ribs into smaller sections so they fit into the pressure cooker.  Added a bottle of Sweet Baby Ray's BBQ and beef broth.  You can add water in place of beef broth, but he is a strong believer that broth add so much more flavor to the meal.

The kids loved this recipe.  The best part is it didn't take all day to cook, and the meat still fell off the bone!
