Crock Pot Bacon Wrapped Smokies


The holidays are such a busy time, but pulling out the crock pots makes things a little easier. You can be sure someone is going to bring the Bacon Wrapped Smokies to a party! When I hosted a friend get-together I made sure this was on the menu.  I also served Crock Pot Cowboy Casserole. That was a huge hit!

I knew the casserole style crock pot would work great for the smokies.  If you have extras, you can double up, but when they are all lined up in the crock, they are cooked evenly.



Bring the kids in the kitchen to help out! Kids can get help wrap the smokies. I use a whole pound of bacon, cut the strips into thirds.









You don't have to use toothpicks, but if you do, don't use the colored ones.  The dye from the colored toothpicks cooks off on the bacon.  Place the bacon wrapped smokies in the crock pot, seam side down. 



If you have a casserole crock pot, that is why I recommend using one.  If have used other crock pots, and they work fine as well. Smokies will cook if you have to layer them, cook as much as you need, they will go fast.  




After the smokies are wrapped, add the brown sugar.  Make sure the smokies are covered.  The brown sugar cooks down to make a great syrup for the smokies.





Crock Pot Bacon Wrapped Smokies
Ingredients:
1 pound bacon
1 large package little sausage smokies
1 cup brown sugar

Directions:
  1. Spray casserole crock pot with Pam
  2. Cut one pound of bacon. Cut the strips into thirds.
  3. Wrap the lil smokies with a ⅓ of the strip. Place the smokies in the crock pot, seam side down.
  4. Cover all smokies with brown sugar. Use up to one cup of brown sugar, or until completely covered.
  5. Cook on high for 2 - 2.5 hours.






Cook in the crock pot for 2 - 2.5 hours.  Watch this closely, you don't want the smokies to start falling apart. This also works great in the oven. Line a cookie sheet with aluminum foil for easy clean up!

I love chicken. I love the crock pot, so anything with crock pot and chicken, is something our family will eat! I had Sunday to prepare a few dinners to prepare us for a busy week of harvest.



We had rain over the weekend, it has really slowed down farmers the beginning of the week.  Some are trying to get back in the bean fields, and it took 2-3 days for beans to dry down.  Bean yields are coming in high, corn yields are still variable.  We will still have a great crop in Northwest Indiana.

Crock Pot Fiesta Crack Chicken is another meal we enjoy during the busy week.  It is easy to warm up, and eat a sandwich on the go, or home after a late night.





This was my first time "cooking" bacon in the oven. Cook on 400 degrees,  I put in on a cookie sheet and 10 minutes later, I flipped the bacon, and put back in oven for a few more minutes.  No greasy mess on the stove.  Win for me.



Place your chicken breasts in the bottom of the crock pot.  Add your softened cream cheese, and ranch seasoning.  I used Fiesta Ranch for an extra kick.




If you don't want the extra kick, use regular ranch seasoning.  I cooked on high for 4-5 hours. Keep a eye out on the cream cheese, and make sure it is evenly distributed over the chicken. If you like a special flavored cream cheese, go for it.




The chicken was so tender, I was able to shred it in the crock pot.



Husband asks, "How did you get the chicken so creamy?"  At what point do you tell him it's the cream cheese?


These buns are awesome too. We picked these homemade buns from our local bakery. These are the buns that sell out in a hurry.  Dave remembers his grandma using these buns for cheeseburgers! Sounds so good!

This recipe is easy, and delicious.  Enjoy!

Crock Pot Fiesta Crack Chicken


Ingredients:
2 lbs chicken breasts
2 8 oz cream cheese
2 packets fiesta ranch seasoning
12 slices of cooked bacon


Directions:
Spray crock pot


Lay the chicken breasts in the bottom of the crock.  Add the cream cheese and the ranch seasoning.

Cook on high for 4 hours, or low 6-8. Shred the chicken and add the crumbled bacon. Serve warm on buns.

Crock Pot Company Casserole makes a big serving, so it is great for tailgating! If you love/need leftovers, this is the perfect recipe!

Time to start thinking about comfort food, crock pot food, and when you have the time between harvest, football food! Tailgating at it's best, brings best friends and great food.  


Harvest is right around the corner.  I mean it's already here! Rain is forecasted for the weekend, but we have had a few customers hauling corn into the elevator this week.  Corn that was planted early last spring is testing 22-19% at the elevator.

The sunrises have been amazing lately!! Sometimes it's hard to get the old iPhone to actually capture the exact colors of the sky, but this view is out of our back yard.  We are so blessed to have this view every morning! 


There is so much happiness in this crock pot.  Cheese and pasta.

Crock Pot Company Casserole


Ingredients:
1 lb . hamburger
1 jar of your favorite spaghetti sauce
16 oz spiral pasta (or any pasta of choice)
1 cup sour cream
8 oz of cream cheese
1 cup cottage cheese
2 cups shredded mozzarella cheese
Garlic, sea salt,  pepper to taste


Directions:
Preheat skillet on stove.


Cut up a small onion, sauteed in the pan until transparent.  Add one pound of hamburger with simple seasonings, sea salt, pepper, and garlic salt. When hamburger is brown, add the spaghetti sauce.


Cook noodles, but remove from water before they are completely done, they will cook more in the crock pot.


In a separate bowl, add the sour cream, cream cheese, cottage cheese and 1 cup of mozzarella cheese.  


In the crock pot, start layering with the beef and sauce, then noodles, then cheese mixture. End with beef and sauce and top with remaining mozzarella.  I like to season with salt and pepper in between the layers.


Cover and cook on high for 2-3 hours.

It's football time folks! It's time to have friends over and enjoy some football!   Simple, easy food, made in a crockpot is the way to go this time of the year. I know my son is a big COLTS fan and was so excited when this crock pot showed up at home! It was the perfect opportunity to make some Crock Pot Shoups Pork BBQ Sliders!

This recipe would also be great for late dinner nights with the family.  We have lots of sporting activites going on right now, and harvest is just around the corner.  We will be making this often!



We tried a new BBQ sauce.  We had friends a the Indiana State Fair who said we needed to try Shoups BBQ.  This BBQ sauce has a great taste, a little kick of spice, and everyone in the family likes. it! We picked up a lot of BBQ and I don't think it will last until next summer when we stock up at the State Fair again!

Use any type of cheese you like, I used mozzarella and it melted nicely on the pork BBQ.
